All of Bengaluru is chuffed that one of the city’s favourite restaurant has won the best dish on platter at the the culinary olympics, the Bocuse d’Or Asia Pacific 2018. This is a big win for India.
How did it all start?
First, they won the Bocuse d’Or India competition held in Delhi, in September 2017. Team Caperberry, which was headed by Chef Abhijit who is the coach and mentor, also had Chef Ranjith Debnath, Commis Aheer Biswas, and Dr. Soundararajan P, who is the general secretary of Indian Federation of Culinary Associations (IFCA). They represented India in the Asia Pacific Continental Selection round to compete with other Asian teams to become one of the five countries from the Asian- Pacific Continent to make it to the world’s most prestigious gastronomy contest finals, which is to be held in January 2019!
It took the team many months of conceptualisation and trials to finalise the two dishes, which they showcased live, in front of the best judges and in a time frame of just 5.35 hrs!!
Of the two dishes, one was a plated dish and the other a silver platter.
The Stunning Peacock Themed Platter for team India was made of Sterling Silver (110cm x 70cm). It was for The Bocuse D’Or Asia Pacific Culinary Competition in Guangzhou, China. This has been painstakingly sculptured by the 150 year old renowned Jewellery house in Bangalore, C.Krishniah Chetty Group of Jewellers and Vinod Hayagriv, who worked hard with them and gave his generous support.
The semi finals of the competition has a two man team representing each of the 24 countries. It is held in Lyon, France, at the end of January. All the teams cook on identical stations and are separated from each other by a small wall. The teams have to prepare a fish dish according to the given theme. They must prepare the fish in the same way on 14 separate platters provided by their respective countries. Next, the teams prepare a meat platter, this meat is also to be prepared in accordance with the theme.
Bocuse d’Or or the culinary olympics is a biennial world chef competition. The competition is named after Paul Bocuse. He was a renowned 3 Michelin star French chef who was known for his simple techniques and fresh ingredients. Bocuse d’Or is the world's most prestigious cooking competition. Held in Lyon, France, the competition happens for two days at the end of January at the SIRHA International hotel. SIRHA is also known for conducting one of the most sophisticated food art fairs in the world.
