Our first thirst quencher ties in with Rama Navami and here's how you can make panaka, by adding water to a concoction of jaggery, lemon juice, pepper, and spices. Enjoy it throughout the season!


  • 1.5 cups water
  • 10 tsp powdered jaggery
  • 12 strands of saffron
  • 2 tbsp lime juice
  • 4 green cardamom
  • A pinch of nutmeg
  • 2 ginger, crushed
  • Basil leaves


  1. Crush the cardamoms and saffron into a fine powder.
  2. Mix the powder with lemon juice, nutmeg, crushed ginger, and jaggery.
  3. Strain the drink and add the basil leaves.
  4. Serve chilled.

Wood Apple (Bael or belada hannu) juice is another summer special thirst quencher.


  • 1.5 cups water
  • 2-3 tsp powdered jaggery
  • 1 Wood Apple
  • A pinch of salt


  1. Separate the wood apple fruit pulp from the husk.
  2. Mix salt and jaggery in water and add the pulp. Mash well, until the pulp dissolves.
  3. Strain the mixture and add ice cubes.
  4. Serve chilled.
